El Cuy (Cavia porcellus), es una especie originaria de la zona andina del Perú, Ecuador, Colombia y Bolivia, es un producto alimenticio nativo, de alto valor nutritivo y bajo costo de producción, que contribuye a la seguridad alimentaria de la población rural de escasos recursos. También es conocido con los nombres de cobayo, curi, conejillo de indias y en países de habla inglesa como Guínea pig.

Teniendo en cuenta que el cuy es una especie precoz, prolífica, de ciclos reproductivos cortos y de fácil manejo, su crianza técnica puede representar una importante fuente de alimento para familias de escasos recursos, así como también una excelente alternativa de negocio con altos ingresos.

A diferencia de la crianza familiar, un manejo técnificado del cuy puede llegar a triplicar la producción a partir de una mejora en la fertilidad de las reproductoras, una mayor supervivencia de las crías y una mejora en la alimentación para un rápido crecimiento y engorde.
