« Le lieu, à la fois par sa proximité de l’Opéra de Lyon et par son architecture, s’est immédiatement imposé à nos yeux comme le futur petit théâtre de notre musique culinaire. Quelques litres d’huile de coude et dizaines de mètres de velours plus tard c’est à vous de lui donner vie le temps de chaque repas.
C’est un pari un peu risqué que de mêler une cuisine simple, toute de goûts et de couleurs, plus qu’inspirée par l’Italie, berceau de jean-Baptiste, à une mise en scène très théâtrale du travail des cuisiniers qui se déroule devant vous “sur scène”.
Un pari d’authenticité, une cuisine qui se veut simple (et ce n’est pas toujours la plus facile, on le sait), de saison et surtout à base du meilleur et du plus frais de l’Italie et de la région lyonnaise. Le travail accompli devant vous, une visite des coulisses (délicate mais possible) et surtout nous l’espérons votre plaisir, sont là pour vous assurer de l’honnêteté de notre démarche. »
