基本のとうがらし、にんにく、生姜で「辛み」、はちみつや果実で「甘み」、かつお節などで「旨み」、その他さまざまな素材を加え、複雑に絡み合う豊かな味に仕上げています。

また、「とうがらしの調合」「生姜の量」などの細部にもこだわり、マイルドで深みのある辛さを表現しています。
