Verduras y hortalizas han de estar presentes en cantidad abundante en la comida y la. 400 g mínimo, según la OMS. En cantidad abundante nos referimos por ejemplo a estos platos: un bol grande de crema de verduras o gazpacho, un plato grande de ensalada, un plato grande de verduras asadas o a la parrilla o un plato de crudités (palitos de verdura cruda) con guacamole o paté vegetal.
Una ración de alimentos proteicos de calidad. Como los alimentos y las combinaciones vistas anteriormente.
Una ración de hidratos de carbono como los cereales y sus derivados (arroz, pan, pasta, avena, mijo, maíz...) o tubérculos (patata, boniato, yuca). Preferiblemente integrales.
En cuanto a la grasa, aceite de oliva virgen extra, para cocinar, aliñar o condimentar. Este también se puede sustituir por el aceite de colza, la grasa de coco virgen o el aceite de girasol alto oleico. Las semillas, frutos secos y el aguacate también aportan grasa saludable.
