Cascajares nació en 1994 con la idea de rescatar un producto de la gastronomía castellana como era el Capón, un manjar que desde hace siglos había sido el plato principal de las mejores celebraciones, aunque había casi desaparecido de las cocinas por la falta de artesanos productores. Alfonso Jiménez y Francisco Iglesias recopilaron información, hicieron estudios sobre razas, alimentación y modos de cría apoyándose en archivos históricos para así crear el auténtico Capón de Cascajares.
