Ingredients
- 11 oz (330 g) sweet potatoes, (approximately 1 large)
- 1/4 cup (60 mL) Milk
- 1 tbsp (15 mL) butter
- Salt and pepper, to taste
- 1/4 tsp (1 mL) dried thyme
- 1 cup (250 mL) Cheddar cheese, grated

instructions:
- Peel and cut sweet potatoes into pieces. Boil in same way as regular potatoes and cook for about 10 minutes.

- Once cooked, strain and mash potatoes with milk and butter. Season and add half the cheese.

- Transfer to a greased baking dish. Sprinkle remaining cheese and broil until it is golden brown.

- Preheat the oven to 500°F.

- Bake the sweet potatoes for 15 minutes, or until the undersides have caramelized to a beautiful deep brown.

Cooks’ Notes
- you should boil the sweet potato in ten minutes, you’ll get your Melting Sweet Potatoes.

- DO use a half sheet pan for this recipe. DO NOT use a glass baking dish which could break at this temperature.

- Be sure your half sheet pan has a rim to keep the broth or stock from running over the edges.

- Half of the time you make these, we had made them with melted butter and olive oil, and the other half of the time we made them with melted extra virgin coconut oil and olive oil. They are equally good.
