Cloves are used for cooking in slow or powdery conditions. It smells bitter and leaves only in small amounts. Its use is present in almost all countries of Europe and Asia. In Indonesia, the name Kretec is used as a perfume for cigarettes. Chinese and Japanese use cloves as incense.


Clove
Cloves have been used for food in the Indian subcontinent for a long time. It is also used in Mexican food. Cloves are used in these areas along with cumin and cinnamon.

The root cause of the aroma of cloves is the compound called "Eugenol". It is the main constituent of oil obtained from cloves, and Eugenol is present in about 12-5% of this oil. This compound has antibacterial and analgesic properties. Other important constituents of clove oil are acetyl eugenol, beta-carophyllin, vanillin, ceratoglycic acid, tannin, galotanic acid, methyl salicylate, flavonoid, eugenin, rheumatin, eugenin, tri-terpengy, sterogenic, clenopenoid.
